We've Got The Food BLAHS !!

Its that time of year for us again.. You know, you are hungry but nothin you can thank of is what you WANNA eat..

Me and the Mrs. have been strainin our brain to come up with somethin we are actually hongry for.. Not just somethin to eat for the sake of eatin, but somethin our taste buds are callin out for..

She says she wants somethin sweet, and I've been tryin to get her talked into us havin homemade peach, apricot, or bannana ice cream.. I could almost live on ice cream durin the hottest part of the summer, but she is afraid she will put the pounds back on that she has shed so far..

A good steak is also one of my favorites for the summertime too.. Mrs. du Toit(in the blogroll) has a post about her version of a good steak, tho hers and my opinion on steak cookin technique are vastly different.. Yet, we both agree that smotherin a good steak with all kinds of sauces and salt is a Crime Against Nature !!

Steak is one of the foods that RECHARGE the body's system AFTER you have stressed it or had it under a heavy workload, while pasta dishes serve you well BERFORE you put your body thru hard labor.. But what the hell do you eat when you look at these foods and just say "NAH, not hungry" ??

Well, the best I can come up with, for today at least, is to thro some hamburger in the skillet with some taco seasonin and dice some onion and lettuce and heat a bowl of refried beans and make burritos with queso melted on top.. Add a generous drizzle of my salsa and that is what we are gonna pig out on, that is if I can ever get myself talked into goin in the kitchen and gettin my ass to work on it.. And maybe have a big bowl of cold peaches with a glob of manez(thats mayonaise for you city folk) on top..

I'd still rather have a big bowl of my homemade ice cream, but, oh well..

Morning WB.

I have a hard time keeping Sweet Sarah satisfied, cause she is a picky eater and won't eat most leftovers and wants something different every meal. I refuse to buy fast food most times, as I just can't afford it and the nutritional value is not all that good anyway.

Anyway, try this, it is one of my favorites. Keeps well in frig, just nuke to warm up.

You could halve this recipe as it makes a bunch.

Papa Ray's Green Chili Chicken Enchiladas

Recipe Ingredients:

12 to 16 corn **Tortillas (depends on your pan)

**So they won't crak and break, I soften them up by heating in a pan with a little oil beforehand.

3 or 4 large Chicken Breasts (already cooked) and cut up in small pieces.

2 cans Cream of Chicken Soup

2 7 oz. cans Green Chiles diced

1 pint Sour Cream

2 to 3 cups Monterey Jack Cheese grated

2 to 3 cups Sharp Cheddar Cheese grated

2 8oz cans of green Enchilada sauce

1 large Onion chopped fine

8 Green Onion Tops chopped


The way I do it, Sarah can eat it. I just eat a few peppers on the side. You could heat it up if you wanted.

Anyway..mix up the soup, onion, green onion tops, sour cream, Chiles, and ench. sauce.

Add most of the cheeses, saving enough for the top.

Also set aside about a cup or more of this mixture without the chicken, then add the cut up chicken to the remaining mixture.

In a deep 9 x 13-inch (or larger) greased baking dish, fill each tortilla with some of the chicken mixture and roll them up.

Sometimes this all doesn't fit, so I use a small brownie pan for the excess.

Anyway, pour remaining sauce over the top of filled tortillas and sprinkle with remaining cheese.

Bake at 350 degrees F for 45 minutes or so.

I cover with tin foil for the first thirty or so minutes, then remove for the remainder of cooking time, Sarah doesn't like them crunchy.

It might be a cooler weather dish, but we like it year round.

papa ray - i do this recipe by layering all the ingredients into a crockpot and cooking it on low all day - turn it off an hour before serving (easier to cut and serve) and my family loves it - spray the inside of your crockpot with pam first.

We dont HALVE nothin round this house !!

I'm just wonderin how this would do with some broccoli and Ranch Dressin in it ??

Bout anythang we cook with cheese has gotta have broccoli in it for us.. Its just another way we can get the Kid to eat her veggies, and like em..

She will eat peas and beans all day long but the green veggies are usually kinda iffy whether she will eat em or not..

Our regular butcher came back to work today after a few xtra days off and he cut some S.W.E.E.T. Boston Butt Pork Roasts and the Mrs. got one and a coupla heads of cabbage, so looks like we are gonna be havin that and a skillet of cornbread in the next few days.. The last time I fixed that the Kid sat up there and ate it like she LOVED it !! Ate more of the cabbage than the roast too.. THAT is a BIG first around this house..

Bacon/tomato/cheese sandwiches beat out the burritos last nite so looks like the burritos are gonna be on for tonite.. I dread cookin in that kitchen this evenin tho.. No air conditioner and when the Mrs. looked at the thermometer out the back door an hour or so ago, it read an even 100 degrees..

I may have to do this in stages.. Cook the meat, cool off, chop the rest of the stuff, cool off, heat the refried beans, cool off, then eat..

And, Nanc.. I got another handful of my tabasco peppers today, but my cherries aint doin worth a flip..

We didn't know what to eat yesterday, so we made almost the same thing. Place some leaves of lettuce on plates, add a layer of burrito chips, pile on pinto beans on top of that, add some Rotel extra hot peppers and tomatoes then a dip of sour cream and top it off with some shredded cheese. You just slide the chips out from underneath and use them to scoop things up. Makes for a fast meal and not too bad eating either.

Most of the time when we don't know what we want to eat and are out driving around, we just head to one of the local fast food fish places and have either fish or shrimp with a big glass of iced tea. That usually satisfies our craving.
